In the bowl of a stand mixer, add Granulated Sugar (1 cup) and Butter (10 tablespoon) and mix until smooth. Add Large Egg (1), Vanilla Extract (1 teaspoon), and Red Food Coloring (1 tablespoon). Mix again until combined.
In a mixing bowl, add All-Purpose Flour (1 1/2 cup), Unsweetened Cocoa Powder (3 tablespoon), Baking Soda (1 teaspoon), Baking Powder (1/4 teaspoon), Ground Cinnamon (1/8 teaspoon), and Salt (1/4 teaspoon). Stir to combine.
Add the dry ingredients slowly into the bowl of the stand mixer with the wet ingredients. Mix until it comes together as a dough.
Cover the dough with plastic wrap and place in the fridge for 1 hour, or until firm.
Take tablespoons of the dough and roll them into small balls. Place on a baking sheet lined with parchment paper. Press down gently to form dough balls into more circular shapes.
Bake at 375 degrees F (190 degrees C) for 7 minutes.
While the cookies are baking, make the cream cheese frosting. In the bowl of a stand mixer, add Cream Cheese (4 ounce) and Butter (1 ounce) and mix to combine. Add Vanilla Extract (1/2 teaspoon) and Powdered Confectioners Sugar (2 cup). Mix again until smooth.
Place spoonfuls of cream cheese frosting on half of the cookies and place another cookie on top.
