Step 1
In the bowl of a stand mixer, add
Granulated Sugar (1 cup)
and
Butter (2/3 cup)
and mix until smooth. Add
Large Egg (1)
,
Vanilla Extract (1 tsp)
, and
Red Food Coloring (1 Tbsp)
. Mix again until combined.
Step 2
In a mixing bowl, add
All-Purpose Flour (1 1/2 cups)
,
Unsweetened Cocoa Powder (3 Tbsp)
,
Baking Soda (1 tsp)
,
Baking Powder (1/4 tsp)
,
Ground Cinnamon (1/8 tsp)
, and
Salt (1/4 tsp)
. Stir to combine.
Step 3
Add the dry ingredients slowly into the bowl of the stand mixer with the wet ingredients. Mix until it comes together as a dough.
Step 4
Cover the dough with plastic wrap and place in the fridge for 1 hour, or until firm.
Step 5
Take tablespoons of the dough and roll them into small balls. Place on a baking sheet lined with parchment paper. Press down gently to form dough balls into more circular shapes.
Step 6
Bake at 375 degrees F (190 degrees C) for 7 minutes.
Step 7
While the cookies are baking, make the cream cheese frosting. In the bowl of a stand mixer, add
Cream Cheese (1/2 cup)
and
Butter (2 Tbsp)
and mix to combine. Add
Vanilla Extract (1/2 tsp)
and
Powdered Confectioners Sugar (2 cups)
. Mix again until smooth.
Step 8
Place spoonfuls of cream cheese frosting on half of the cookies and place another cookie on top.
