Frozen Spinach , thawed
1
Small Onion , diced
2 cloves
Garlic , minced
to taste
Salt and Pepper
1 pckg
Manicotti Noodles
2 cups
Ricotta Cheese
3/4 cup
Cream Cheese
1/2 cup
2 cups
2 1/2 cups
Marinara Sauce

Step 1
Preheat the oven to 350 degrees F (180 degrees C).
Step 2
In a pan, add Olive Oil (2 Tbsp) , and soften the Onion (1) and Garlic (2 cloves) . Then, add Frozen Spinach (2 cups) stir and season with Salt and Pepper (to taste) . Cook for about 1 minutes and stir constantly. Transfer to a bowl and set aside.
Step 3
Mix Ricotta Cheese (2 cups) , Cream Cheese (3/4 cup) , Parmesan Cheese (1/2 cup) with the spinach. Add some Mozzarella Cheese (2 cups) until they are combined. Season with Salt and Pepper (to taste) .
Step 4
Cook the Manicotti Noodles (1 pckg) for 7 minutes in boiling water and drain.
Step 5
Take a piping bag and fill in the mixture. Pour the filling in the manicotti. Continue with the rest.
Step 6
Pour Marinara Sauce (2 1/2 cups) in a baking pan and put the noodles on top and top with the rest of marinara sauce. Cover with foil.
Step 7
Bake for 25 minutes and sprinkle the remaining mozzarella and bake for another 5 minutes. Serve and enjoy!
