Preheat the oven to 400 degrees F (200 degrees C).
Place the Beet (7) and Garlic (3 clove) on greased baking sheet. Roast the beets for about an hour, or until fork-tender.
Once the beets are cooked and cooled, peel them and grate them. Mince the remaining garlic cloves.
In a medium bowl, combined grated beets, Sour Cream (4 tablespoon), Mayonnaise (2 tablespoon) and minced garlic. Season Salt (to taste) and Ground Black Pepper (to taste).
