Preheat the oven to 400 degrees F (200 degrees C).
Garlic (3 cloves)
on greased baking sheet. Roast the beets for about an hour, or until fork-tender.
Once the beets are cooked and cooled, peel them and grate them. Mince the remaining garlic cloves.
In a medium bowl, combined grated beets,
Sour Cream (1/4 cup)
Mayonnaise (2 Tbsp)
and minced garlic. Season
Salt (to taste)
Ground Black Pepper (to taste)
