Step 1
Wash Kale (2 bunches) and rip away from stems into bite sized pieces, then chop them finely. After, combine it with Beets (4) , Pumpkin Seeds (1/3 cup) and Medjool Dates (6) in a large bowl.
Step 2
Whisk Lemons (1/2 cup) , Extra-Virgin Olive Oil (1/2 cup) Sea Salt (1/2 tsp) and Honey (2 Tbsp) together. Pour over top of salad and enjoy!
