Wash Kale (2 bunches) and rip away from stems into bite-sized pieces, then chop them finely. After, combine it with Beets (2 cups) , Pepitas (1/3 cup) , and Medjool Dates (6) in a large bowl.
Step 2
Whisk 1/2 cup Lemon Juice (1) , Extra-Virgin Olive Oil (1/2 cup) Sea Salt (1/2 tsp) , and Honey (2 Tbsp) together. Pour over the top of the salad and enjoy!
