Preheat the oven to 375 degrees F (190 degrees C).
First, roast the Garlic (1 head). Take the entire head of garlic and place in the oven. Roast for 25 minutes, or until fork tender.
In a large mixing bowl, combine the Cream Cheese (2 package), Light Sour Cream (1/2 cup), Shredded Cheddar Cheese (3/4 cup), Monterey Jack Cheese (1/2 cup), Cooked Bacon (4 slice), Chipotle Seasoning (1 dash), Paprika (1 dash), Salt and Pepper (to taste), and a good squeeze of the roasted garlic, about 3 cloves. Mix until combined. Taste a bit and adjust seasonings as necessary!
Transfer to a round baking dish and top with the remaining Cooked Bacon (4 slice), Jalapeño Pepper (1), and Shredded Cheddar Cheese (1/4 cup).
Bake for 30 minutes, or until the cheese is melted and bubbly.
Serve with chips or crackers and enjoy!
