Step 1
In a food processor, puree Dates (1/2 cup) into a smooth paste. If your dates are quite hard, soak them in warm water for a bit before pureeing.
Step 2
Open the can of Full-Fat Coconut Milk (1 can) , skim the hardened cream off the top, and add it to the food processor, along with 2 tablespoon of the remaining coconut water, Vanilla Extract (1/4 tsp) , and Salt (1 pinch) . Blend until smooth. You can add a bit more coconut water as needed to reach a consistency to your liking.
