Preheat the oven to 325 degrees F (160 degrees C) and line a baking sheet with parchment paper or a silicone mat.

In a small bowl, whisk together All-Purpose Flour (1 1/4 cups), Ground Cinnamon (1/2 tsp), Ground Cardamom (1/2 tsp), and Salt (1/4 tsp).

In a separate bowl, add Unsalted Butter (1/2 cup) and Powdered Confectioners Sugar (1/3 cup) and cream for 2-3 minutes, mixing on medium speed.

Add Pecans (1 cup). Add Vanilla Extract (1/2 tsp) and Milk (1/2 Tbsp) and mix for 30 seconds.

Add dry ingredients and mix until well combined. The dough will be soft but it shouldn't stick to your hands.

Roll 1 1/2 tbsp of dough into a 3-inch log and place it on the prepared baking sheet. Repeat with the rest of the dough, placing each cookie log 2-inch apart.

Bake for 20-25 minutes or until the bottom of the cookies starts turning golden brown.

Cool for 10 minutes on the baking tray and then cool completely on a rack.

While the cookies are cooling, add Freeze Dried Apples (1/4 cup) and Powdered Confectioners Sugar (1/4 cup) to a blender and blend until fine.
