Preheat oven to 350 degrees F (180 degrees C).
Cut Pattypan Squash (1) into ¼"-3/8" slices and lay out onto two lightly greased pans.
Wash and cook Sweet Potato (2) in microwave (or oven if time permits).
Add Onion (1/2) to pan and lightly spray with Coconut Oil Cooking Spray (to taste) and saute until transparent and soft.
Set tender onions aside and cook Kale (1 handful) until tender crispy.
Remove skins from cooked sweet potatoes and mash flesh with fork in bowl.
Add Almond Milk (1/2 cup) and Garlic (1 clove) and stir until creamy.
Smooth sweet potato mash over each patty pan slice and top with cooked onions, kale and Jalapeño Pepper (1/2)
Bake for approximately 10-15 minutes or until squash is soft.
Once removed from oven, sprinkle with Feta Cheese (1/4 cup) and serve!
