Preheat oven to 350 degrees F (180 degrees C).
Pattypan Squash (1)
into 1/4 to 3/8-inch slices and lay them out onto two lightly greased pans.
Wash and cook
Sweet Potatoes (2)
in the microwave (or oven if time permits).
to pan and lightly spray with
Coconut Oil Cooking Spray (to taste)
and saute until transparent and soft.
Set tender onions aside and cook
Kale (1 handful)
until tender crispy.
Remove skins from cooked sweet potatoes and mash flesh with a fork in a bowl.
Almond Milk (1/2 cup)
Garlic (1 clove)
and stir until creamy.
Smooth sweet potato mash over each patty pan slice and top with cooked onions and kale.
Bake for approximately 10-15 minutes or until squash is soft.
Once removed from the oven, sprinkle with
Feta Cheese (1/4 cup)
