Step 1
Preheat oven to 350 degrees F (180 degrees C) .
Step 2
In a large bowl, stir together
Granulated Sugar (1 1/2 cups)

Unsweetened Cocoa Powder (3 1/2 Tbsp)
and
Salt (1/4 tsp)
. Add
Eggs (2)
,
Butter (1/4 cup)
,
Evaporated Milk (5 fl oz)
, and
Vanilla Extract (1 tsp)
. Mix well, using low to medium speed of an electric mixer, until smooth.
Step 3
Pour into an unbaked
9-inch Pie Crust (1)
and bake for about 30 to 45 minutes, or until center is set.
Step 4
Let cool completely and then cut into wedges. Serve with
Whipped Cream (to taste)
and
Fresh Mint Leaves (to taste)
