Peel and cube the Peach (1 cup).

Zest the Lemon (1).

Once zested, squeeze the juice from the lemon into a small bowl. You will need 1 teaspoon.

In a large bowl, stir together the Fresh Blueberries (2 cups), peach, Xanthan Gum (1 tsp), Natural Sweetener (2 Tbsp) and 1 teaspoon lemon juice until everything is well coated.
