Spicy Mixed Beans and Tuna Salad

A spicy mixed bean salad with grilled tuna that's to lick your fingers from top to bottom!. If you're vegan or vegetarian you can omit the tuna or swap it for a vegetarian/vegan alternative like grilled Tofu.

Canned Pinto Beans , drained

or Any Bean Variety

Canned Cannellini White Kidney Beans , drained

Smoked Paprika

Ground Ginger

Extra-Virgin Olive Oil

2 handfuls

Fresh Herbs , chopped

Red Chili Pepper , chopped

•

1 stalk

Celery , chopped

•

Lemon , juiced

•

Fresh Tuna Steak

or Grilled Tofu

Cooking Instructions

Season the Canned Great Northern Beans (1 cup) , Canned Pinto Beans (1 cup) , and Canned Cannellini White Kidney Beans (1 cup) with Salt (2 tsp) , Ground Black Pepper (1 tsp) , Smoked Paprika (1 tsp) , Ground Ginger (as needed) , and Extra-Virgin Olive Oil (4 Tbsp) . Mix well. Then, add Lemon (1) .

Then chop Fresh Herbs (2 handfuls) and add to the mix along with the Celery (1 stalk) and Red Chili Pepper (1) . Mix well with the other ingredients.

Rub the Fresh Tuna Steak (2) in Olive Oil (as needed) , Salt (to taste) , and Ground White Pepper (to taste) . Cook for 3 to 4 minutes on each side and leave the center pink. Slice the steaks.

To serve, put the mixed beans then tuna in a lunchbox. Enjoy!
