Step 1
Preheat the oven to 375 degrees F (190 degrees C), and lightly coat the inside of an 8x8 baking dish with
Non-Stick Baking Spray (as needed)
. Set aside.
Step 2
In a medium-size bowl, mix together the
Old Fashioned Rolled Oats (2 cups)
,
Baking Powder (1 tsp)
,
Ground Cinnamon (1/2 Tbsp)
, and
Sea Salt (1/2 tsp)
. Set aside as well.
Step 3
Zest
Lemon (1)
completely.
Step 4
Once zested, squeeze the juice from the lemon into a small bowl.

Melt the
Light Butter (1 Tbsp)
.
Step 6
In another medium bowl, whisk together
2% Reduced Fat Milk (2 cups)
,
Maple Syrup (1/3 cup)
, lemon juice and zest,
Large Egg (1)
, melted butter, and
Vanilla Extract (1/2 Tbsp)
.
Step 7
Add the wet ingredients to the dry ingredients and stir just until combined. Pour the mixture into the prepared baking dish.
Step 8
Top the mixture with
Fresh Blueberries (1 cup)
.
Step 9
Transfer the baking dish to the oven and bake for about 35 minutes, or until the edges are browning and the middle is set. Remove from the oven and allow to cool for a few minutes.
Step 10
Cut evenly into 9 squares and enjoy! Store leftovers covered in the fridge for up to 3-5 days.
