Shortbread Jam Bars

You can eat these short bread jam bars for dessert, breakfast, or any time of the day!

Ingredients

1/3 cup Granulated Sugar
1 pinch Salt
6 tablespoon Raspberry Jam

STEP 1
Preheat the oven to 375 degrees F (190 degrees C).
STEP 2
Line an 8-inch square baking dish with aluminum foil, leaving an overhang.
STEP 3
Whisk the All-Purpose Flour (1 1/2 cup), Granulated Sugar (1/3 cup), and Salt (1 pinch) together in a bowl.
STEP 4
Work in the Unsalted Butter (10 tablespoon) with your fingers to make a crumbly dough.
STEP 5
Scoop out 2 tablespoons of your mixture and put in a container in the fridge. This will become your topping.
STEP 6
Pour the remaining mixture onto your foil lined dish and press it lightly into an even crust with your fingers. Stick it in the freezer for 10 minutes, until firm.
STEP 7
Bake the crust, 15 minutes.
STEP 8
Pull the crust out of the oven and spread Raspberry Jam (6 tablespoon) on top, making sure to leave a 1/2 inch border around the edges. You can use any fruit jam or preserve you have on hand.
STEP 9
Sprinkle on your crumble topping and pop it back into the oven for 25 minutes, until the edges are golden brown.
STEP 10
Let cool for 20 minutes, then lift out of the pan and cut into squares.
