This recipe was inspired by a time I had spicy Italian sausage and some tortilla wraps but wasn't sure how to put the two together. Turns out that it makes a great breakfast combo with some bell pepper, cheese melted on top, some chives and sour cream. If you don't like spicy food, feel free to use just regular Italian sausage, it will still add a lot of flavor to the dish.

You can either cook the sausage and prepare all the ingredients the same day, or do them the night before to save time in the morning.

Preheat grill or frying pan to medium-high heat. Cook Spicy Italian Sausage Links (2 pieces) until done all the way to the center and blackened on the outside. Slice sausages into thin slices. If preparing these the night before, just refrigerate until ready to cook.

In a medium bowl, whisk together Eggs (4), Milk (1/4 cup), McCormick® Taco Seasoning Mix (1/2 tsp), Salt (1/4 tsp) and Ground Black Pepper (1 dash) until egg is smooth and there are no lumps of taco seasoning.

Add Onion (1/4 cup) and Bell Pepper (1 cup) to the egg mixture.

Preheat a medium-sized frying pan on medium heat. Spray pan with a non-stick spray or add some oil. Pour in egg mixture and cook until egg is cooked thoroughly. Turn mixture in pan with a spatula to make sure all sides are cooked.

Once the egg is done, add slices of American Cheese Slices (3) on top of the eggs, turn off the heat, and cover the pan for 5 minutes to allow the cheese to melt.

Microwave Tortillas (3) for thirty seconds on high. Cover the tortillas with a damp paper towel to keep from drying out.

Divide eggs and place on tortillas. Top each tortilla with a tablespoon of Sour Cream (3 Tbsp) and chopped Fresh Chives (1 Tbsp).
