Preheat grill or frying pan to medium-high heat. Cook Spicy Italian Sausage (2 piece) until done all the way to the center and blackened on the outside. Slice sausages into thin slices. If preparing these the night before, just refrigerate until ready to cook.
In a medium bowl, whisk together Egg (4), Milk (1/4 cup), Taco Seasoning (1/2 teaspoon), Salt (1/4 teaspoon) and Ground Black Pepper (1 dash) until egg is smooth and there are no lumps of taco seasoning.
Add Onion (1/4 cup) and Bell Pepper (1 cup) to the egg mixture.
Preheat a medium-sized frying pan on medium heat. Spray pan with a non-stick spray or add some oil. Pour in egg mixture and cook until egg is cooked thoroughly. Turn mixture in pan with a spatula to make sure all sides are cooked.
Once the egg is done, add slices of American Cheese Slice (3 slice) on top of the eggs, turn off the heat, and cover pan for 5 minutes to allow the cheese to melt.
Microwave Tortilla (3) for thirty seconds on high. Cover the tortillas with a damp paper towel to keep from drying out.
Divide eggs and place on tortillas. Top each tortilla with a tablespoon of Sour Cream (3 tablespoon) and chopped Fresh Chives (1 tablespoon).
