Cooking Instructions

Preheat the oven to 350 degrees F (180 degrees C).

Heat Olive Oil (1 tbsp) in a pan over medium heat.

Add the Yellow Onions (2 cups), Celery (1 cup), Carrots (1/2 cup), and Salt (to taste). Mix and cook for about 7 minutes.

Add Garlic (4 cloves) and cook for another 2 minutes.
5.
Add the Vegetable Broth (3 tbsp), Brown Lentils (2 cups), Dried Oregano (1 tbsp), Dried Thyme (1 tsp), Dried Sage (1/2 tsp), Salt (to taste), and Ground Black Pepper (to taste) and cook for 5 minutes more stirring occasionally.

In a large bowl, add the lentil mix, Breadcrumbs (1 1/4 cups), Walnuts (1 1/2 cups), Ground Flaxseed (1 tbsp) mixture, and Tomato Paste (1/2 cup). Mix thoroughly using a masher or your hands.

Flatten the contents of the bowl into a loaf pan.

Make the glaze by mixing the Ketchup (1/3 cup), Balsamic Vinegar (2 tbsp), and Maple Syrup (1 tbsp) together.
9.
Evenly spread glaze on the top of the loaf.
10.
Cover with the loaf pan with tinfoil and bake at 350 degrees F (180 degrees C) for 50-60 minutes.
