Preheat oven to 450 degrees F (230 degrees C).
Grill Brie Cheese Round (1 package) over medium heat for about 3 minutes per side.
Carefully transfer Brie to round cast-iron pan or ovenproof dish. Top with Plum (1), Shallot (1), Garlic (1 clove), and Fresh Thyme (4 sprig). Drizzle the Extra-Virgin Olive Oil (2 tablespoon) and Aged Balsamic Vinegar (2 tablespoon) evenly over the top. Season with Coarse Kosher Salt (1/2 teaspoon) and Ground Black Pepper (1/2 teaspoon).
Bake in the oven for 10-12 minutes until the plum and shallot slices are caramelized and the cheese is creamy.
Serve immediately with grilled or plan Baguette (1).
