Ingredients
- Serves 4 +

2 tablespoon Olive Oil
4 cup Wild Mushrooms
2 finely chopped Medium Shallot
1 1/2 cup Arborio Rice
1/2 cup White Wine
6 cup Warm Vegetable Broth
2 tablespoon Butter
to taste Salt and Pepper

STEP 1
Heat Olive Oil (1 tablespoon) over medium heat in a large pot. Add Wild Mushrooms (4 cup) and cook until they begin to sweat (release their moisture), about 5 minutes. Remove mushrooms from pan.
STEP 2
Heat remaining Olive Oil (1 tablespoon) in the pan over medium heat. Add Shallot (2) and Garlic (2 clove) cooking until shallots are translucent and soft, about 3 minutes.
