Preheat the oven to 350 degrees F (180 degrees C).
Line a sheet tray with a silicone mat. Combine the Cashew Nuts (1 cup), Olive Oil (2 tablespoon), Grated Parmesan Cheese (1 tablespoon), Dried Parsley (1/2 teaspoon), Dried Basil (1/2 teaspoon) and Dried Tarragon (1/2 teaspoon) in a bowl and stir it all together well to make sure the cashews are coated.
Spread the coated cashews out in a single layer on the sheet tray and roast them for about 10 minutes. Serve them immediately for a yummy snack!
