Step 1
Preheat the oven to 350 degrees F (180 degrees C). Spray an 8x8 baking pan with cooking spray.

Whisk the
All-Purpose Flour (1 cup)

Old Fashioned Rolled Oats (3/4 cup)
and
Salt (1 pinch)
together in a bowl and set it aside.
Step 3
Fill a small pot halfway with water and bring it to a gentle simmer on the stove.
Step 4
Combine the
White Chocolate Chips (1 1/3 cups)
,
Strawberry Jam (3/4 cup)
and
Butter (1/3 cup)
in a heat proof bowl and place it above the simmering water to melt everything together, stirring often with a heat proof utensil. Once it is all melted and smooth, set it aside for a minute to let it cool a bit.
Step 5
Set up a stand mixer with the paddle attachment and combine the
Granulated Sugar (1 cup)
and
Eggs (4)
in its bowl. Beat them together thoroughly until pale and airy.
Step 6
Slowly pour in the melted white chocolate and strawberry mixture and let it completely get beaten in. Then pour the juice from
Lemons (2 1/2)
in.
Step 7
Finally, turn the speed to low and slowly add in the dry ingredients until you have a smooth batter.
Step 8
Pour the batter evenly into the baking dish and bake it for 55-60 minutes, until golden brown on top and a toothpick comes out cleanly.
Step 9
Let them completely cool, then cut the blondies into 16 equal squares. Serve immediately.
