In a large bowl, mix Quinoa (1 cup) , Bell Peppers (1 cup) , Roma Tomatoes (1 cup) , Avocados (2) , and Fresh Mint (1 tsp) .
Step 2
Season with Salt and Pepper (to taste) and Paprika (1/2 tsp) . Squeeze Lime (1) and add the fresh juice to the quinoa mixture. Mix well.
Step 3
Serve the quinoa mixture with Romaine Lettuce (1) leaves.
