In a large bowl, mix Quinoa (1 cup), Bell Pepper (1 cup), Roma Tomato (1 cup), Avocado (2), and Fresh Mint (1 teaspoon).
Step 2
Season with Salt and Pepper (to taste) and Paprika (1/2 teaspoon). Squeeze Lime (1) and add the fresh juice to the quinoa mixture. Mix well.
