Put Egg (3) Yolks, Lime Juice (1 tablespoon), Strong Mustard (1 teaspoon), and Salt and Pepper (to taste) into a tall, narrow jar.
Pour Light Olive Oil (1 cup) on top. Let them sit for about 15 seconds so that it will settle in the jar.
Insert the stick blender at the bottom of the jar.
Turn the blender on and don’t move it around until about 25-30 seconds or until the bottom of the glass gets a thicker consistency. Start moving around (and up) with the blender until it looks like mayonnaise.
Add in Fresh Chives (to taste) and Fresh Dill (to taste).
