This Grilled Veggie Sandwich with Aged Cheddar and Balsamic Reduction meets all my criteria to make the regular meal rotation - tasty, healthy, and easy!

Preheat oven to 400 degrees F (200 degrees C).
Line baking sheet with nonstick spray, lay Sweet Potato (1/2) out in single layer. Bake for 15 minutes or until cooked through, flipping halfway through.
Meanwhile, add Sweet Onion (1) to a saucepan with Coconut Oil (as needed) and cook over medium heat, stirring frequently until caramelized.
Assemble sandwiches by spreading Aioli Sauce (to taste) on Sandwich Bread (8 slices), then layer White Cheddar Cheese (4 slices), sweet potatoes, caramelized onions, Fresh Spinach (to taste), and Balsamic Reduction (to taste).
Grill the sandwiches using panini maker or place in oven at 350 degrees F (180 degrees C) for 3 to 5 minutes.
