Step 1
Preheat oven to 400 degrees F (200 degrees C).
Step 2
Line baking sheet with nonstick spray, lay Sweet Potato (1/2) out in single layer. Bake for 15 minutes or until cooked through, flipping halfway through.
Step 3
Meanwhile, add Sweet Onion (1) to a saucepan with Coconut Oil (as needed) and cook over medium heat, stirring frequently until caramelized.
Step 4
Assemble sandwiches by spreading Aioli Sauce (to taste) on Sandwich Bread (8 slices) , then layer White Cheddar Cheese (4 slices) , sweet potatoes, caramelized onions, Fresh Spinach (to taste) , and Balsamic Reduction (to taste) .
Step 5
Grill the sandwiches using panini maker or place in oven at 350 degrees F (180 degrees C) for 3 to 5 minutes.
