Step 1
Steam the
Sweet Corn (3 ears)
in a microwave oven or on the stovetop in a covered dish with water for about 6 minutes or until tender. Cool with water, cut from cobs, and set aside.
Step 2
Make
Whole Wheat Couscous (1 cup)
according to package directions.
Step 3
In a salad bowl, add couscous, corn,
English Cucumber (1)

Cherry Tomatoes (1 pckg)
,
Red Onion (1/2)
and mix all together.
Step 4
In separate bowl, stir
Olive Oil (3 Tbsp)
, juice from
Lemon (1)
,
Dried Oregano (1 tsp)
,
Ground Cumin (1/2 tsp)
,
Salt (1/2 tsp)
, and
Ground Black Pepper (1/2 tsp)
.
Step 5
Add dressing to salad bowl and mix well.
Step 6
Add
Fresh Parsley (to taste)
and mix. Enjoy!
