Whole Wheat Couscous
dry
3 ears
Sweet Corn , cooked, cut

Cherry Tomatoes , halved
1/2
Red Onion , chopped
1/2 tsp
Ground Cumin
1/2 tsp
to taste
Fresh Parsley , chopped

Step 1
Steam the Sweet Corn (3 ears) in the Panasonic Microwave Oven or on the stovetop in a covered dish with water about 6 minutes or until tender. Cool with water, cut from cobs, and set aside.
Step 2
Make Whole Wheat Couscous (1 cup) according to package directions.
Step 3
In a salad bowl, add couscous, corn, English Cucumber (1) , Cherry Tomatoes (1 pckg) , Red Onion (1/2) and mix all together​.
Step 4
In separate bowl, stir Olive Oil (3 Tbsp) , Lemon Juice (3 Tbsp) , Dried Oregano (1 tsp) , Ground Cumin (1/2 tsp) , Salt (1/2 tsp) , and Ground Black Pepper (1/2 tsp) .
Step 5
Add dressing to salad bowl and mix well.
Step 6
Add Fresh Parsley (to taste) and mix. Enjoy! Cooking results may vary depending on microwave oven used.
