Cut Extra Firm Tofu (1 block) into 3 sections lengthwise and press each piece with paper towels to remove excess liquid.

Mix Soy Sauce (1/2 cup), Brown Sugar (3 Tbsp), and Garlic (1/2 Tbsp) in a microwave-safe dish. Heat in a microwave oven for 45 seconds and stir well.

Cut tofu into cubes, then add to wok or pan with Grapeseed Oil (as needed) and cook on medium-high until tofu is desired texture.

Add 1/2 of the sauce and continue to cook. Add Bell Pepper (1) and Scallions (4 stalks) and stir well.
