Vegan African Chow Mein

Ever heard of African Chow Mein? It’s a basic hotdish or casserole that’s been around for decades! I’m not sure how it got its name, but it’s a classic and easy to make into Vegan African Chow Mein! This is a great, hearty vegan meal when you’re craving comfort food!

Vegan Ground Beef

5 cups

Almond Milk , divided

•

2 cups

Celery , chopped

•

1 cup

Brown Rice

•

1/3 cup

Soy Sauce

•

1/3 cup

Unbleached All Purpose Flour

•

4 Tbsp

Buttery Spread

•

1 pckg

Brown Mushrooms , sliced

•

Medium White Onion , chopped

(3 oz)

Crunchy Rice Noodles

•

4 stalks

Scallions , chopped

(optional)

Cooking Instructions

Preheat oven to 375 degrees F (190 degrees C).

In saucepan, combine Almond Milk (4 cups) Unbleached All Purpose Flour (1/3 cup) , Buttery Spread (4 Tbsp) , Brown Mushrooms (1 pckg) , Salt (to taste) , and Ground Black Pepper (to taste) . Stir until thick, about 5 minutes.

Add sauce, Vegan Ground Beef (1 pckg) , Celery (2 cups) , White Onion (1) , Brown Rice (1 cup) , Soy Sauce (1/3 cup) , and Almond Milk (1 cup) to 9x13-inch pan and mix evenly.

Bake for 1 hour.

Top with Crunchy Rice Noodles (1 can) and Scallions (4 stalks) . Enjoy!
