Place the Sweet Potato (2) in a baking dish with 2 inches of water and cover with a lid. Cook in the Panasonic Microwave Oven on high for 8 minutes.
In an extra large frying pan or wok, add Grapeseed Oil (1 tablespoon), Chickpeas (1 can), and Trader Joe's® Mango Ginger Chutney (1/3 cup). Cook covered on medium-high for about 5 minutes, stirring about every minute. Chickpeas should be slightly charred. Push to side of pan.
Add Grapeseed Oil (1 tablespoon) and Trader Joe's® Sriracha Flavored Baked Tofu (2 package) to pan. Cook covered, mixing tofu every minute or so until most edges are brown.
Drain water from cooked sweet potatoes and add to chickpeas and tofu, mixing thoroughly.
Add Broccoli (1 head), Red Onion (1), Bell Pepper (1), Oil (1 tablespoon), and Greek Seasoning (1 teaspoon). Mix together and cook 1 minute while covered.
Serve and enjoy! Cooking results may vary depending on microwave oven used.
