Cherry Tomatoes (1 1/3 cups)
Scallions (1/3 cup)
Red Onions (2 Tbsp)
Italian Flat-Leaf Parsley (1 Tbsp)
Capers (1 Tbsp)
Fresh Oregano (1/2 Tbsp)
Olive Oil (1 Tbsp)
Lemon Juice (to taste)
Salt and Pepper (to taste)
in a medium size bowl and stir to combine.
Allow to rest for 30-60 minutes prior to serving to help meld flavors.
Serve alongside your favorite white fish, chicken, crostini or eggs.
