Preheat the oven to 350 degrees F (180 degrees C).
In a medium size bowl, combine Spelt Flour (2 cup), Baking Powder (1 teaspoon), Baking Soda (1 teaspoon), Ground Cinnamon (1 teaspoon), Ground Ginger (1 teaspoon), Ground Nutmeg (1/2 teaspoon), Ground Allspice (1/2 teaspoon), and Ground Cloves (1 pinch).
In a small bowl, combine Vegetable Oil (1/3 cup), Coconut Sugar (1/2 cup), Water (1/3 cup) and Vanilla Extract (1 teaspoon).
Add the wet mixture to the dry mixture along with the 100% Pumpkin Purée (1 can). Mix well making sure there are no flour clumps. Taste the batter and adjust the flavor or sweetness to your liking.
Pour batter into a lightly greased loaf pan. Sprinkle the top with Pumpkin Seeds (to taste), if desired. Bake for 50-55 minutes.
Once done, remove from oven and let cool slightly before serving.
Let cool completely before storing.
