In a medium size bowl, combine Spelt Flour (2 cups), Baking Powder (1 tsp), Baking Soda (1 tsp), Ground Cinnamon (1 tsp), Ground Ginger (1 tsp), Ground Nutmeg (1/2 tsp), Ground Allspice (1/2 tsp), and Ground Cloves (1 pinch).

In a small bowl, combine Vegetable Oil (1/3 cup), Coconut Sugar (1/2 cup), Water (1/3 cup) and Vanilla Extract (1 tsp).

Add the wet mixture to the dry mixture along with the 100% Pumpkin Purée (1 can). Mix well making sure there are no flour clumps. Taste the batter and adjust the flavor or sweetness to your liking.

Pour batter into a lightly greased loaf pan. Sprinkle the top with Pepitas (to taste), if desired. Bake for 50-55 minutes.
