Step 1
Preheat the oven to 350 degrees F (180 degrees C).
Step 2
In a medium size bowl, combine Spelt Flour (2 cups) , Baking Powder (1 tsp) , Baking Soda (1 tsp) , Ground Cinnamon (1 tsp) , Ground Ginger (1 tsp) , Ground Nutmeg (1/2 tsp) , Ground Allspice (1/2 tsp) , and Ground Cloves (1 pinch) .
Step 3
In a small bowl, combine Vegetable Oil (1/3 cup) , Coconut Sugar (1/2 cup) , Water (1/3 cup) and Vanilla Extract (1 tsp) .
Step 4
Add the wet mixture to the dry mixture along with the 100% Pumpkin Purée (1 can) . Mix well making sure there are no flour clumps. Taste the batter and adjust the flavor or sweetness to your liking.
Step 5
Pour batter into a lightly greased loaf pan. Sprinkle the top with Pumpkin Seeds (to taste) , if desired. Bake for 50-55 minutes.
Step 6
Once done, remove from oven and let cool slightly before serving.
Step 7
Let cool completely before storing.
