Arrange the Sharp Cheddar Cheese (4 cup) in an even layer in a shallow pan or baking dish
In a small bowl or measuring glass, combine Ground Black Pepper (1/2 teaspoon), Sea Salt (1/2 teaspoon), Extra-Virgin Olive Oil (1/2 cup), White Wine Vinegar (1/2 cup), Garlic (4 clove), Fresh Oregano (3 tablespoon), Fresh Chives (3 tablespoon), Red Fresno Chili Pepper (2), and Granulated Sugar (1 teaspoon) until well blended.
Pour the marinade over the cheddar cheese cubes. Cover and let rest at room temperature for one hour, then chill for several hours to overnight.
Transfer to a jar or serving platter and serve with crackers.
