Author's Notes

-The olive oil in the marinade will harden during refrigeration. It will quickly melt at room temperature before serving. -Refrigerate left overs. Can be kept refrigerated for one week.

Cooking Instructions

Step 1
Arrange the Sharp Cheddar Cheese (4 cups) in an even layer in a shallow pan or baking dish
Step 2
In a small bowl or measuring glass, combine Ground Black Pepper (1/2 tsp) , Sea Salt (1/2 tsp) , Extra-Virgin Olive Oil (1/2 cup) , White Wine Vinegar (1/2 cup) , Garlic (4 cloves) , Fresh Oregano (3 Tbsp) , Fresh Chives (3 Tbsp) , Red Fresno Chili Peppers (2) , and Granulated Sugar (1 tsp) until well blended.
Step 3
Pour the marinade over the cheddar cheese cubes. Cover and let rest at room temperature for one hour, then chill for several hours to overnight.
Step 4
Transfer to a jar or serving platter and serve with crackers.
