Step 1
Peel the
Baby Potatoes (3 1/3 cups)
, then place them in a pot and boil until they are very soft.
Step 2
Next, strain the potatoes, toss them gently in a bowl so that they get little cracks, and set them aside

On a baking tray, sprinkle
Olive Oil (3 Tbsp)
,
Garlic (1 bulb)
, and
Fresh Rosemary (to taste)
.
Step 4
Add the potatoes onto the tray, season with
Salt (to taste)
and
Ground Black Pepper (to taste)
and gently toss them around so they get well coated.
Step 5
Bake at 350-375 degrees F (180-190 degrees C) for about 40 minutes.
Step 6
Remove the potatoes from the oven. With a potato masher or the bottom of a small glass, gently smash potatoes into flat patties.
Step 7
Pop them back into the oven and keep cooking for 10-15 minutes, until they are nice and crispy on the outside but still soft on the inside.
Step 8
Serve them hot with roasted chicken or turkey.
