Author's Notes

Serves 9 slices.

I use only 1/4 cup maple syrup and 20-30 drops of liquid stevia. If you're using large eggs, you won't need to add any more water to make up for the loss of 1/4 cup liquid by cutting the syrup in half.

Cooking Instructions

Step 1
Preheat oven to 350 degrees F (180 degrees C). Line an 8-inch square or round cake pan with parchment paper or grease with coconut oil.
Step 2
In a large bowl, combine the Coconut Flour (3/4 cup) , Ground Cinnamon (1/2 Tbsp) , Ground Ginger (1 tsp) , Ground Nutmeg (1/2 tsp) , Ground Cloves (1/2 tsp) , Baking Powder (1 tsp) , and Baking Soda (1/2 tsp) .
Step 3
In a medium bowl, combine Large Eggs (4) , Maple Syrup (1/2 cup) , Unsweetened Apple Sauce (1/2 cup) , and Extra-Virgin Olive Oil (1/4 cup) .
Step 4
Pour wet ingredients into the large bowl with coconut flour mixture. Fold in Apples (1 cup) .
Step 5
Pour into the cake pan and sprinkle with Walnuts (1/2 cup) and Coconut Sugar (1 Tbsp) . Bake for 35-40 minutes or until a fork inserted comes out clean.
Step 6
Let cool in pan for 5 minutes and then remove from pan.
Step 7
Cool for 5 more minutes before slicing. Serve with ice cream.
