Preheat oven to 350 degrees F (180 degrees C). Line an 8-inch square or round cake pan with parchment paper or grease with coconut oil.
In a large bowl, combine the
Coconut Flour (3/4 cup)
Ground Cinnamon (1/2 Tbsp)
Ground Ginger (1 tsp)
Ground Nutmeg (1/2 tsp)
Ground Cloves (1/2 tsp)
Baking Powder (1 tsp)
Baking Soda (1/2 tsp)
In a medium bowl, combine
Large Eggs (4)
Maple Syrup (1/2 cup)
Unsweetened Apple Sauce (1/2 cup)
Extra-Virgin Olive Oil (1/4 cup)
Pour wet ingredients into the large bowl with coconut flour mixture. Fold in
Apples (1 cup)
Pour into the cake pan and sprinkle with
Walnuts (1/2 cup)
Coconut Sugar (1 Tbsp)
. Bake for 35-40 minutes or until a fork inserted comes out clean.
Let cool in pan for 5 minutes and then remove from pan.
Cool for 5 more minutes before slicing. Serve with ice cream.
