Preheat oven to 375 degrees F (190 degrees C).

In a large cast-iron skillet or dutch oven, heat the Olive Oil (1 Tbsp) to medium-high. Trim excess fat from the Bone-in, Skin-on Chicken Thighs (8) but leave the skin on. Sprinkle both sides of the chicken with Salt (to taste) and Ground Black Pepper (to taste).
