Preheat the oven to 400 degrees F (200 degrees C).

Cut Cauliflower (6 1/3 cups) into florets, about bite-size.

In a large bowl, toss cauliflower florets with Vegetable Oil (1 Tbsp). Once all florets are coated, sprinkle Barbecue Seasoning (1 1/2 Tbsp) and toss to combine again.

Lay the florets on the baking tray and bake for 15-20 minutes.

Remove the cauliflower from the oven. Add into a large bowl, toss with Barbecue Sauce (1/4 cup) until well coated. Lay them back on the same tray, then return them to the oven and cook for about 7 more minutes.

Serve on top of the cooked White Rice (1 cup) and garnish with Scallion (1 stalk).
