Step 1
Preheat the oven to 350 degrees F (180 degrees C) and line a standard size loaf pan with parchment paper.
Step 2
In a large mixing bowl, combine
Oat Flour (1 1/2 cups)

Tapioca Starch (1/4 cup)
,
Coconut Flour (1/4 cup)
,
Baking Soda (1/2 tsp)
,
Baking Powder (1 tsp)
, and
Fine Sea Salt (1 tsp)
. Mix together with a wire whisk.
Step 3
In a small bowl, whisk
Eggs (3)
and combine with
Unsweetened Apple Sauce (2/3 cup)
,
Apple Cider Vinegar (1 Tbsp)
,
Maple Syrup (2 Tbsp)
,
Oat Milk (1/4 cup)
, and
Extra-Virgin Olive Oil (2 Tbsp)
.
Step 4
Pour wet ingredients into dry ingredients and mix. Add
Pepitas (1/4 cup)
,
Sunflower Seeds (1/4 cup)
, and
Sesame Seeds (2 Tbsp)
and fold into batter. Let the batter settle for a few minutes so coconut flour absorbs all the liquid.
Step 5
Pour the mixture into a parchment paper-lined standard-size loaf pan. Sprinkle top with additional seeds if you like. Bake for 45-50 minutes until a fork inserted comes out clean.

Let cool completely before slicing.
