Makes 1 loaf.

Refrigerate for up to 5 days or freeze for up to 3 months. Slice before freezing.

You can make your own oat flour by blitzing oats preferably in a high wattage blender to a fine flour texture. If the flour is not fine, your bread will yield a different texture and it may not work.

Preheat the oven to 350 degrees F (180 degrees C) and line a standard size loaf pan with parchment paper.

In a large mixing bowl, combine Oat Flour (1 1/2 cups), Tapioca Starch (1/4 cup), Coconut Flour (1/4 cup), Baking Soda (1/2 tsp), Baking Powder (1 tsp), and Fine Sea Salt (1 tsp). Mix together with a wire whisk.

In a small bowl, whisk Eggs (3) and combine with Unsweetened Apple Sauce (2/3 cup), Apple Cider Vinegar (1 Tbsp), Maple Syrup (2 Tbsp), Oat Milk (1/4 cup), and Extra-Virgin Olive Oil (2 Tbsp).
step 3 In a small bowl, whisk Eggs (3) and combine with Unsweetened Apple Sauce (2/3 cup), Apple Cider Vinegar (1 Tbsp), Maple Syrup (2 Tbsp), Oat Milk (1/4 cup), and Extra-Virgin Olive Oil (2 Tbsp).

Pour wet ingredients into dry ingredients and mix. Add Pepitas (1/4 cup), Sunflower Seeds (1/4 cup), and Sesame Seeds (2 Tbsp) and fold into batter. Let the batter settle for a few minutes so coconut flour absorbs all the liquid.
