Preheat oven to 450 degrees F (230 degrees C) and line baking sheet with aluminum foil.
Stir together Olive Oil (2 tablespoon), Maple Syrup (2 tablespoon), and Cayenne Pepper (1/4 teaspoon) in a bowl.
Peel the Sweet Potato (3).
Cut the sweet potatoes into 1/4 inch slices.
Place the sweet potato slices onto the baking sheet and brush with the mixture.
Sprinkle potatoes slices with Salt (to taste) and Ground Black Pepper (to taste).
Bake for 8 minutes, then turn potato slices over.
Brush with remaining maple mixture.
Bake until crispy on the edges (about another 7-8 minutes more).
