Step 1
Preheat oven to 450 degrees F (230 degrees C) and line baking sheet with aluminum foil.
Step 2
Stir together Olive Oil (2 Tbsp) , Maple Syrup (2 Tbsp) , and Cayenne Pepper (1/4 tsp) in a bowl.
Step 3
Peel the Sweet Potatoes (3) .
Step 4
Cut the sweet potatoes into 1/4 inch slices.
Step 5
Place the sweet potato slices onto the baking sheet and brush with the mixture.
Step 6
Sprinkle potatoes slices with Salt (to taste) and Ground Black Pepper (to taste) .
Step 7
Bake for 8 minutes, then turn potato slices over.
Step 8
Brush with remaining maple mixture.
Step 9
Bake until crispy on the edges (about another 7-8 minutes more).
Step 10
Serve and enjoy!
