Mini Leftover Ham & Cheese Puffs

This is one appetizer you’ll keep making again and again because it is that easy and delicious. Leftover ham gets a facelift with tangy cream cheese and nutty swiss for an irresistible flavor. By using frozen puff pastry, these little puffs come together in a flash - and they’ll be gone just as quickly. Do yourself a favor and double the recipe - don’t say we didn’t warn you!

Frozen Puff Pastry

•

3 oz

Cooked Ham , finely diced

•

3/4 cup

Swiss Cheese , shredded

•

1/2 cup

Cream Cheese , softened

•

1 tsp

Dijon Mustard

•

1 stalk

Scallions , thinly sliced

•

Eggland's Best Classic Egg , lightly beaten

•

to taste

Ground Black Pepper

Cooking Instructions

Preheat the oven to 400 degrees F (200 degrees C).

Cut the Puff Pastry (2 sheets) into an equal square of about 2.3x2.3-inches (6x6 cm). Set aside in the refrigerator.

In a medium mixing bowl, combine the Cooked Ham (3 oz) , Swiss Cheese (3/4 cup) , Cream Cheese (1/2 cup) , Scallions (1 stalk) , Dijon Mustard (1 tsp) , and Pepper (to taste) together. Set aside.

Arrange the puff pastry on the parchment paper-lined baking sheet.

Top each of them with a heaping teaspoon of ham and cheese mixture in the middle.

Fold the corner onto the top like an envelope. Pinch the middle to seal the envelope.

Brush all sides of the pastry with Egg Wash (1) . Bake for 10-15 minutes or until puffed and golden.

Serve warm.
