Whisk together the Large Egg (1), Apple Cider Vinegar (2 tablespoon), Water (2 tablespoon), and Granulated Sugar (1/4 cup) until well combined.
In a sauce pan, heat mixture at medium heat until it thickens to a custard consistency. Stir continuously for about 6 minutes. Remove from heat.
Add the Miracle Whip (4 tablespoon) to the cooked egg mixture and refrigerate dressing until ready to use.
Fry Bacon (4 slice) at medium to medium-high heat until crispy, about 8 minutes.
Chop bacon into small pieces.
In a large bowl, combine the Fresh Baby Spinach (4 ounce), Baby Bella Mushroom (1 1/2 cup), White Onion (1/4 cup), and bacon.
Pour over the cooled sweet and sour dressing and toss until the dressing evenly coats the salad. Serve and enjoy!
