Step 1
In a medium pot, sauté
White Onions (1/2 cup)
in
Unsalted Butter (1 Tbsp)
over medium heat until soft, 3 to 4 minutes.
Step 2
Add
Chicken Broth (1 3/4 cups)
and bring to a boil. Add
Green Peas (1 cup)
, cover and simmer for 3 to 4 minutes.
Step 3
Stir in
Curry Powder (3/4 tsp)
,
Salt (1/2 tsp)
,
Ground Black Pepper (1/2 tsp)
,
Couscous (1 1/2 cups)
and
Dry Roasted Peanuts (1/2 cup)
. Cover and remove from heat and allow to sit for 5 minutes.
Step 4
Fluff with a fork and stir in
Fresh Cilantro (1/4 cup)
. Serve immediately.
