Couscous with Peas and Peanuts is a quick and easy side dish hinted with curry and just the right amount of crunch and the peas and cilantro make it fresh and bright. You’ll love it for its simplicity but will make it again because of the flavor. Makes about 6 cups.

Cooking Instructions
1.
In a medium pot, sauté White Onions (1/2 cup) in Unsalted Butter (1 Tbsp) over medium heat until soft, 3 to 4 minutes.

Add Chicken Broth (1 3/4 cups) and bring to a boil. Add Green Peas (1 cup), cover and simmer for 3 to 4 minutes.
3.
Stir in Curry Powder (1 tsp), Salt (as needed), Ground Black Pepper (as needed), Couscous (1 1/2 cups) and Dry Roasted Peanuts (1/2 cup). Cover and remove from heat and allow to sit for 5 minutes.
4.
Fluff with a fork and stir in Fresh Cilantro (4 Tbsp). Serve immediately.
