Cooking Instructions

Step 1
Preheat oven to 450 degrees F (230 degrees C).
Step 2
Spiralize Sweet Potatoes (4 cups) , then layer in cast iron skillet or oven safe casserole dish.
Step 3
Bake sweet potatoes for 15 minutes.
Step 4
In a bowl, Stir Chili Powder (1 tsp) , Smoked Paprika (1/2 tsp) , Ground Turmeric (1/2 tsp) , and Garlic Salt (1/4 tsp) into Vegetarian Refried Beans (1 can) .
Step 5
Remove sweet potatoes from oven, add seasoned refried beans, followed by Shredded Mild Cheddar Cheese (1/4 cup) , Salsa (1/4 cup) , and Organic Eggs (6) . Bake additional 15 minutes, or until egg whites are cooked and yolks are medium.
Step 6
Garnish with Avocados (to taste) , Cotija Cheese (to taste) , Fresh Cilantro (to taste) , and Sour Cream (to taste) . Serve and enjoy!
