Author's Notes

The fresh blueberries will cause this to go bad sooner than would a simple oil and vinegar dressing. However, this is pretty acidic, so it should stay good for longer than fresh blueberries would. Safely enjoy for about 1 week.

Step 1
In a blender, combine Fresh Blueberries (1 cup) , Balsamic Vinegar (1/4 cup) , Honey (2 Tbsp) , 1 Tbsp of Lemon Juice (1) , Salt (1 pinch) , and Ground Black Pepper (1 pinch) .
Step 2
With the blender running, slowly pour in Olive Oil (1/2 cup) and continue blending until completely emulsified and creamy, about 30 seconds.
