A Chickpea Corn Salad that's bursting with veggies and herbs, and tied together with a spiced Greek yogurt dressing.

1 Tbsp Extra-Virgin Olive Oil
15 oz Drained Canned Corn
15 oz Drained Canned Chickpeas
1/2 cup Chopped Scallion
1/2 cup Crumbled Feta Cheese
1/2 cup Plain Greek Yogurt
1/4 tsp Ground Cumin
1/4 tsp Salt

STEP 1
Heat Extra-Virgin Olive Oil (1 Tbsp) in a saute pan on the stove over medium-high heat. Add Canned Corn (15 oz) and cook, stirring frequently, until corn begins to brown on the edges, 3 to 5 minutes.
STEP 2
In a large bowl, toss together cooked corn, Canned Chickpeas (15 oz), Red Bell Pepper (1), Red Onion (1/4 cup), Scallion (1/2 cup), Fresh Parsley (1/2 cup), and Crumbled Feta Cheese (1/2 cup).
