In a small bowl, mix together the Granulated Sugar (1/2 cup) and Ground Cinnamon (1 teaspoon). Coat the Apple (3) with the sugar mixture.
Place the Puff Pastry (2 sheet) on a flat working surface or roll out pastry until thin if using homemade. Spread the apples over evenly making sure you don't make a double layer.
Roll up the pastry. Cut into 12 pieces, place them on a baking tray lined with baking paper and sprinkle over the Demerara Sugar (2 tablespoon) on the tops.
Bake in the oven at 350 degrees F (180 degrees C) for 20-25 minutes or until golden.
To make the icing, mix together the Vanilla Extract (1/2 teaspoon), Corn Syrup (2 tablespoon), and Powdered Confectioners Sugar (1 cup). Once combined add the Milk (2 tablespoon) and mix well again until glossy and smooth. Place into a piping bag.
Drizzle over the icing when the pinwheels is slightly cooled. Serve and enjoy!
