In a small bowl, mix together the
Granulated Sugar (1/2 cup)
Ground Cinnamon (1 tsp)
. Coat the
with the sugar mixture.
Puff Pastry (2 sheets)
on a flat working surface or roll out pastry until thin if using homemade. Spread the apples over evenly making sure you don't make a double layer.
Roll up the pastry. Cut into 12 pieces, place them on a baking tray lined with baking paper and sprinkle over the
Demerara Sugar (2 Tbsp)
on the tops.
Bake in the oven at 350 degrees F (180 degrees C) for 20-25 minutes or until golden.
To make the icing, mix together the
Powdered Confectioners Sugar (1 cup)
Milk (2 Tbsp)
Vanilla Extract (1/2 tsp)
. Once combined add the
Corn Syrup (2 Tbsp)
and mix well again until glossy and smooth. Place into a piping bag.
Drizzle over the icing when the pinwheels is slightly cooled. Serve and enjoy!
