Place the Puff Pastry (2 sheets) on a flat working surface or roll out pastry until thin if using homemade. Spread the apples over evenly making sure you don't make a double layer.

Roll up the pastry. Cut into 12 pieces, place them on a baking tray lined with baking paper and sprinkle over the Demerara Sugar (2 Tbsp) on the tops.

To make the icing, mix together the Powdered Confectioners Sugar (1 cup), Milk (2 Tbsp), and Vanilla Extract (1/2 tsp). Once combined add the Corn Syrup (2 Tbsp) and mix well again until glossy and smooth. Place into a piping bag.
