Prepare Smoker or Grill for indirect cooking at 375 degrees F (190 degrees C).
Boneless, Skinless Chicken Thighs (1 lb)
into bite size portions. Wrap each piece with ½ slice of
Bacon (12 slices)
and secure with a toothpick.
Brown Sugar (1/2 cup)
Barbecue Rub (2 Tbsp)
Cane Sugar (2 Tbsp)
Cayenne Pepper (1/2 tsp)
in a small bowl and sprinkle over all sides of the bacon-wrapped chicken.
Place the chicken bites onto the grill and cook for about 45 minutes or until the bacon is completely brown and sticky.
