This cheesy mashed cauliflower makes such a wonderful, creamy and flavorful side that is low carb and simple! It’s a perfect complement to any meal.

Shredded Cheddar Cheese
Bring a pot of water to a boil and season it with two very generous pinches of Salt (2 pinches). Add the Cauliflower (1 head) and boil them until completely tender and mashable, for about 30 minutes. Test them with a fork to make sure.
Once they are done, drain them and return them to the pot.
Use a potato masher to mash them thoroughly, then add in the Shredded Cheddar Cheese (1/2 cup), Greek Yogurt (1/4 cup), Fresh Chives (3 Tbsp), Garlic Powder (1 tsp), 1 tsp salt, Ground Turmeric (1 tsp), and Paprika (1/2 tsp). Stir it all together thoroughly.
Transfer to a serving dish and serve immediately. Enjoy!
