Yields 4-6 servings.

This recipe makes 12-16 golfball-sized falafel balls, but you can easily double or even triple the recipe and make a larger batch.

Cooking Instructions

Step 1
Drain and rinse Dried Chickpeas (1 cup) , then add to food processor and pulse until they are the texture of chopped nuts, scrape down the sides as needed.
Step 2
Transfer chickpeas to a large bowl. Add White Onion (1/2) , Garlic (2 cloves) , Chili Pepper (1) , Fresh Cilantro (1 cup) , and Fresh Parsley (1 cup) to the food processor and pulse until the onion pieces are similarly sized to the chickpeas.
