Yields 4-6 servings.

This recipe makes 12-16 golfball-sized falafel balls, but you can easily double or even triple the recipe and make a larger batch.

Drain and rinse Dried Chickpeas (1 cup), then add to food processor and pulse until they are the texture of chopped nuts, scrape down the sides as needed.
step 2
Transfer chickpeas to a large bowl. Add White Onion (1/2), Garlic (2 cloves), Chili Pepper (1), Fresh Cilantro (1 cup), and Fresh Parsley (1 cup) to the food processor and pulse until the onion pieces are similarly sized to the chickpeas.
