Prepare the middle eastern-style salad. In a medium-size mixing bowl, whisk together Garlic (1 clove), Lemon (1/2), and Extra-Virgin Olive Oil (2 Tbsp).

Add Roma Tomatoes (3), Cucumber (1/4), Red Onion (1/4), Fresh Parsley (1 handful), and Chickpeas (1 1/2 cups). Toss everything together and season with Salt (to taste). Place in the fridge.
