Preheat your oven to 350 degrees F (180 degrees C). Line a baking pan with parchment paper.

Separate the Eggs (2) yolks from the egg whites. Whip up the egg whites firmly.

In a blender, add Blood Orange (1) with the egg yolks, Brown Sugar (1/2 cup), Oil (2.5 oz), and Ricotta Cheese (1/2 cup). Blend it for a few seconds.

Transfer the mixture into a bowl and gently mix in the Whole Wheat Flour (1 1/2 cups), Baking Powder (1 tsp), and Salt (1 pinch). Then slowly fold in the whipped egg whites.

Transfer into the parchment-paper-lined baking pan and bake in preheated oven for 45-50 minutes or until a tooth stick placed in the center comes out dry.
