Step 1
Crack
Eggs (2)
into a bowl and whisk together.
Step 2
Place the flour into a bowl. and set aside.
Step 3
Place the breadcrumbs into a bowl. and set aside.
Step 4
In a mixing bowl, add cooked
White Rice (2 1/2 Tbsp)

Egg (1)

Tomato Sauce (1 Tbsp)
,
Hot Sauce (1 dash)
, and
Kosher Salt (to taste)
. Add
Parmigiano-Reggiano (1/2 cup)
as needed to keep the rice balls from falling apart.
Step 5
Form the rice mixture into 12 patties. Press each into one hand, add
Bocconcini (12 pieces)
and close the disk. Roll between two hands to form even balls. Then evenly coat each ball in the whisked egg,
All-Purpose Flour (1/2 cup)
and then
Breadcrumbs (1/2 cup)
Step 6
Fry suppli in oil heated to 365 degrees F (185 degrees C), until outside is golden and cheese in the center has melted.
Step 7
Serve with your choice of dipping sauce. Enjoy!
