Place the breadcrumbs into a bowl. and set aside.

In a mixing bowl, add cooked White Rice (2 1/2 Tbsp), Egg (1), Tomato Sauce (1 Tbsp), Hot Sauce (1 dash), and Kosher Salt (to taste). Add Parmigiano-Reggiano (1/2 cup) as needed to keep the rice balls from falling apart.

Form the rice mixture into 12 patties. Press each into one hand, add Bocconcini (12 pieces) and close the disk. Roll between two hands to form even balls. Then evenly coat each ball in the whisked egg, All-Purpose Flour (1/2 cup) and then Breadcrumbs (1/2 cup)
